Every time I see a water refilling station, I picture a locked cabinet with a hose running to the city tap. Honestly? That’s not far off—the source is usually municipal. The difference is what happens after the tap.
Most refill kiosks run city water through stages like sediment + carbon + reverse osmosis (and sometimes UV/ozone) before you pay for it. The source is “tap,” the treatment is the product.
So why doesn’t all water taste the same?
- Minerals = flavor. Calcium, magnesium, and bicarbonate change the taste. “Flat” water is often highly purified (RO/distilled). “Sweet”/“hard” water usually has more minerals (higher TDS).
- Disinfectants. Tap often carries a hint of chlorine/chloramine; bottled water typically uses ozone/UV (no taste).
- Packaging. Plastics can add a whisper of “bottle taste,” especially if warm or stored long.
What about “mountain spring” on the label?
There’s real meaning and a lot of marketing. In the U.S., “spring water” has a legal definition: it must come from an underground formation that flows naturally to the surface. That doesn’t mean snowmelt off a postcard peak; it means a protected underground source that emerges. Brands also sell “purified water,” which often starts as municipal water and is then treated (reverse osmosis, distillation, etc.). You’ll sometimes see “minerals added for taste”—that’s common (magnesium sulfate, calcium chloride, sodium bicarbonate).
Who regulates this stuff—and is water “FDA-approved”?
- Bottled water is regulated by the FDA as a packaged food. They set Standards of Quality (think limits for contaminants) and require good manufacturing practices and testing. FDA doesn’t “pre-approve” each bottle; companies must comply and can be inspected/forced to recall if they don’t.
- Tap water is regulated by the EPA (Safe Drinking Water Act). Your local utility must publish an annual Consumer Confidence Report (what’s in the water, how it’s treated).
Are there “added elements” they don’t talk about?
Legally, bottled water must list added ingredients. Common, above-board adds:
- Minerals for taste (listed on the label)
- Fluoride (must be disclosed if added)
- CO₂ (sparkling)
- Ozone (disinfection; not an ingredient that stays, but worth knowing)
If a brand is doing it right, they’ll publish a Water Quality Report with the source, treatment, and mineral profile. Many put a QR code on the label—worth a scan.
My rule of thumb
If you want “tastes like nothing,” choose purified. If you want character, try spring or mineral (look for calcium/magnesium on the report). And if you’re paying kiosk prices, you’re buying the filtration, not the source—so pick a station that maintains its filters and shows recent service dates.
